Food Safety Supervisor
Certain food service and food retail outlets businesses are required to appoint at least one trained Food Safety Supervisor (FSS) per site and notify their local council.
The FSS must be trained in designated units of competency by a Registered Training Organisation (RTO). The Nominated Food Safety Supervisor shall be reasonably available to advise and supervise food handlers to safely handle unpackaged potentially hazardous food that is ready to eat. Should the nominated Food Safety Supervisor leave, the business has 30 days to nominate a replacement.

Course Outline
“Food Safety Essentials” incorporates Food Safety Supervisor and Good Manufacturing Processes (GMP) into a one day program. It is suitable for the full range of food businesses. You will be provided with the knowledge and the skills to recognise, control and monitor the hazards associated with food handling at your premises.
Prerequisites: None
Course Outcomes
On completion of this program, you will be able to:
- safe use of raw egg products
- cleaning and sanitising
- NSW Food Act 2003 offences
Accreditation
On successful completion of the one day program, the assessment workbook, and workplace application, one nationally accredited unit is awarded:
Recognition of prior learning: (RPL)
The NSW Food Authority has specific arrangements in place for RPL.

Food Safety Supervisor qualifications need to be refreshed or repeated every 5 years.

Course Outcomes

- Comply with Food Safety Principles and the Law.
- Identify requirements of the FSANZ Food Standard Codes.
- Follow the food safety procedures or food safety program, completing food safety documentation, recording and reporting
- Store and handle food products safely.
- Identify common sources and types of contamination and food safety hazards
- Identify conditions that can cause physical, chemical and microbiological contamination, and identify appropriate controls
- Identify and demonstrate appropriate food safety policies and procedures correctly in relation to critical control points and effective control of food safety hazards within the business including receival, storing, preparing, processing, displaying, transporting and disposal of food, and corrective action to control potentially unsafe food conditions.
- Apply and maintain personal health, hygiene standards
- Maintain work area and equipment in a clean and sanitised state.
- Monitor food safety systems within the business and contribute to improvements.
- Apply the FSANZ 3.2.2A requirements for substantiation of food handling controls and workplace documentation of food safety
- Apply the NSW Food Authority focus areas:-( Where the program is delivered in NSW)

- cleaning and sanitising
- NSW Food Act 2003 offences
